Put the shredded ampalaya in hot water with some salt before cooking and drain after about 5 mins (this is to reduce the bitter taste of ampalaya). Quickly sautee the vegetables and set aside. Beat egg and make an egg wrapper by evenly spreading the beaten egg in a frying pan (preferrably teflon pan). Put the vegetables in the center of the egg and fold into an omelet. You can put a variation such as topping it with melted cheeze and pan fried diced tomatoes.
