Red wine is very rich in polyphenols and has been considered a protective factor for heart disease and risk high cholesterol. One way to use red wine if you don’t want to get tipsy is to use it for cooking. Mushrooms are very good to use as material in cooking with red wine. Choose whole shiitake mushrooms and sautee the garlic and shallots; when the mushorooms are sauteed follow immediately with a cup of red wine and let it simmer under low fire until the red wine disappears but not to overcook the mushroom, just enough to get the stem soft. Put a dash of salt and pepper during simmering. Although this recipe is designed to create a siding for broiled chicken (breast) or pan fried chicken breast, you can also combine it with broccoli and eat it as is without meat.

Shred cabbage, carrots, some capsicum, and turnips and wrap in rice-paper spring roll wrapper (available in large grocery
or supermarket). Put some lemon basil over the shredded vegetables just underneath the wrapper. You can use your favorite sauce such as hoisin or you can make your own using vinegar, salt and sugar. This recipe is essentially a combination of a variety of crisp vegetables created in very enticing Asian presentation. Since all veges are raw, it is important to wash the veges well and also soaked in water overnight. -

A mushroom meal is better done with as a combination (Shiitake, Button, Oyster) in order to benefit from the
antioxidants from at least 3 or more types. You can prepare a combination of shiitake, oyster, white (button) mushroom (2-1-1 cup ratio). Just sautee these in garlic and onions and pour a 2 tablespoons of oyster sauce mixed with a cup of water and let it simmer under low fire for a few minutes until the stem of the shiitake mushrooms are soft. Add chopped spring onions before serving.Stir-fried winter mushrooms are just tossed into the vege stir-fry. You can add a dash of sesame oil to enhance the flavor. You can also add fried tofu.

Oyster mushrooms have been found to contain large amounts of L-ergothioneine.
