Coriander or cilantro (Coriandrum sativum L.) is a herb used in many Asian food. It is also called chinese parsely but this herb is also known in Mexico. It is believe to improve digestion and can have a calming effect on the body especially those who are hyperactive. The active ingredient is coriandrol; and the other common components of cilantro are mostly volatile oils. It can bring a relaxing feeling if you eat this special herb. Although it is a bit pungent, it is very good as flavor enhancer to spring rolls. This is a desert wherein a piece of lakatan banana and pineapple is made into a puree and poured over mango strips on ice shavings. No sugar or syrup is necessary; the pinapple-banana puree will serve as the syrup. The key is to choose sweet pineapple and the banana should be “just ripe.” You can use crushed pineapple if pineapple is not available. Make sure that the pineapple is also well blended; otherwise children might not like the texture of the pineapple pulp. This dessert is intended for children who are used to see ice cones or snow cones with colorful syrup. So if you wish to be creative, you can substitute red colored fruits such as strawberry as a puree and add a swirl of choco syrup on top. If you want several fruits into the puree, you can do so but choose fruits that are sweet. Alfalfa (Medicago satina) is one of the most nutritious leguminous herb. It is considered in history as a healing herb. Alfalfa is rich in vitamins A,B, D, and E and some C and K. With these contents, alfalfa can be considered useful as a vegetable for detoxifying the body of unwanted toxins and metabolites. The nutritional property is attributed to the richness in proteins with less amount of carbohydrates than grains or wheat. The essential amino acids of alfalfa include arginine, lysine, theronine and tryptophane. Furthermore, it rich in fiber and chlorophyll. -

Soak 1 cup of red kidney beans in hot water and let it soften. Boil 3/4 cup of glutenous
or sticky rice in water and then add the softened red kidney beans. Put 1 tablespoon cooking chocolate and some brown sugar to taste. Boild in low fire until everything is cooked and almost blending. Serve with milk. This recipe is intended to introduce the value of protein in an ordinary food like champurado that kids will like to eat. -

Shred ampalaya, onions, capsicum (red, green and yellow if available). Put the shredded ampalaya in hot water with some salt before cooking and drain after about 5 mins (this is to reduce the bitter taste of ampalaya). Quickly sautee the vegetables and set aside. Beat egg and make an egg wrapper by evenly spreading the beaten egg in a frying pan (preferrably teflon pan). Put the vegetables in the center of the egg and fold into an omelet. You can put a variation such as topping it with melted cheeze and pan fried diced tomatoes.
